Chocolate Almond Biscotti

2 cups flour
1 cup sugar
1/3 cup cocoa powder
1 tsp. baking soda
1/4 tsp. salt
2 eggs
2 egg whites
3/4 tsp. vanilla extract
2/3 cup whole almonds, toasted
1/3 cup chocolate chips
In mixer with paddle attachment (note: I used a food processor) combine
flour, sugar, cocoa powder, baking soda and salt. Mix together eggs, egg
whites and vanilla extract. Gradually add egg mixture (if using
processor, just dump in all at once) blending on low. Toss almonds with
chocolate chips and add to mixture, blend til just combined. (for food
processor, just hand mix chips and nuts in)
On a well floured surface, roll dough into 2 logs, 2 inches in diameter.
Place on agresed sheet pan and brush with beated egg. Bake at 350
degrees until light golden brown (which you can't really see since
they're chocolate...), about 30-35 minutes. Allow logs to cool 15
minutes .(this is the stage at which you could freeze them once totally
cooled - don't cut them if you are freezing) and cut into slices on the
bias. Place slices on a greased sheet pan and bake in a 350 degree oven
until toasted, about 15 to 20 minutes. Cool and store in an airtight
container.
