Strawberry Bread

 3 cups plain flour 
 4 eggs, beaten 
 1 tsp. salt  
 1 tsp. soda 
 2 TBS ground cinnamon
 2 cups sugar [this can actually be reduced to 1c due to the applesauce]
 1 pkg. strawberry Jell-O 
 1 1/4 cups canola oil [I use 1/4c oil; 3/4c applesauce]
 2 cups frozen strawberries 
 1 cup chopped pecans 
 powdered sugar  
 
Sift together all dry ingredients.  Beat eggs & add strawberries, oil, &
pecans.  Add the dry ingredients & mix with a spoon. Pour into 2 greased &
floured loaf pans. Bake at 350° for 50 to 55 minutes. Cool before removing
from pan. Sprinkle powdered sugar on top of loaves. 
 
Sugar in baked recipes can generally be easily reduced by 1/3-1/2 the amount
without a disaster!  Recipe often contain MUCH moresugar than is really needed.
Also, using fruit substitutes for the fats, such as applesauce adds natural 
and healthier sweetness.
