Banana-Carrot Nutbread

2 cups flour (all purpose)
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 cup mashed, ripe bananas
1 cup sugar
3/4 cup vegetable oil
2 eggs
1 cup finely grated, pared carrots
1/2 cup chopped pecans

Sift together flour, baking soda, and salt and cinnamon.  Set aside.

Combine bananas, sugar, oil and eggs.  Beat with electric mixer at medium
speed for 2 minutes.  Stir in dry ingredients.  Fold in carrots and
pecans.  Spread in greased and floured loaf pan.  (Use the largest loaf
pan you have available.)  Bake at 350° 55 minutes or until wooden
toothpick comes out clean.
