NOTES : Substitution: For a milder version of this recipe, use bulk pork
sausage instead of chorizo sausage.

Variation: Ham and Cheddar Wedges are easy to make using 1 cup of finely
chopped fully cooked ham instead of the sausage and Cheddar insteadof
mozzarella cheese.

Did you know? Chorizo is a highly seasoned, coarsely ground pork sausage
flavored with garlic, chili powder and other spices. It is widely used in
both Mexican and Spanish cooking.
