Microwave Nut Brittle

1 cup sugar
1/2 cup Karo syrup (light or dark - I like dark, but both are yummy)
1/8 tsp salt
1 1/2 cups nuts (I like almonds. Cashews are really nice, and peanuts
always work well too.  Peanuts should be the roasted kind, but almonds
are better unroasted/blanched)
1 tsp butter
1 tsp vanilla
1 tsp baking soda

grease cookie sheet and metal spatula

In 2 quart glass bowl mix sugar, corn syrup and salt together. Microwave on
high 7-8 minutes (based on 700-900 watt oven) or until syrup is pale yellow
(darker though if you use dark syrup).  Remove from oven CAREFULLY (I make
sure the cats and kid are not around, this stuff is very dangerously hot
and will burn severely as it sticks to the skin) and stir in nuts.
Microwave 1-2 minutes or until nuts are lightly browned. Remove from oven
and immediately stir in butter, vanilla and the baking soda until foamy.
Quickly pour onto prepared cookie sheet, spread evenly with spatula and set
somewhere to cool.  Then, bust it into pieces and chomp away!

If you don't cook it long enough, it isn't very brittle, and will stick
like crazy to any fillings - yuk.  Once you get it figured out for your
particular oven, it's a really great recipe to have on hand for quick
easy holiday gifts and stuff.  People are always impressed, thinking I
used a regular stove and candy thermometer.
