Double Coated Chicken

Source: Back of a cornflakes box

7 cups corn flakes, crushed to 1 3/4 cups
1 egg
1 cup milk
1 cup all-purpose flour
1/2 tsp salt
1/4 tsp pepper
8 pieces frying chicken, washed and patted dry
3 tbsp margerine or butter, melted

Preheat over to 350º.  Coat shallow baking pan with cooking spray.

Place cornflakes cereal into shallow pan, set aside.

In a small mixing bowl, beat egg and milk slightly.  Add flour, salt and
pepper.  Mix until smooth.  Dip chicken in batter and coat with cereal
crumbs.  Place in single layer, skin side up, in prepared pan.  Drizzle with
melted butter.

Bake for 1 hour or until internal temp is at least 160º.  Do not
cover pan or turn chicken.
