Chicken Kiev

4 chicken breasts, boned and skinned
2 pieces bread in crumbs
4 Tbl. parmesian cheese
1/2 tsp. garlic salt
1/4 tsp. black pepper
4 Tbl. butter, softened
1 Tbl. chopped parsley
4 oz. mozarella cheese

Place chicken, one piece at a time between 2 sheets of of wax paper.  Pound
with flat side of mallet until 1/4 inch thick.

In plate, combine:  bread, parmesian cheese, 1 tsp. oregano, garlic salt,
pepper and set aside.

In small bowl, stir together butter, parsley, 1/2 tsp. oregano.

Spread 1/2 Tbl. of herb-butter mixture across each chicken breast, about 1
inch from lower edge.  Lay 1 oz of mozarella cheese over margerine mixture.

Fold lower edge of breast over filling, then fold in sides and roll up.

Dip in melted margerine.  Roll in crumbs.

Place in baking dish that has been sprayed with Pam, without touching, seam
side down.

Drizzle any remaining butter.  Sprinkle any remaining crumbs on top.

Cover and refrigerate at least 4 hours to allow flavors to blend.

Bake uncovered 425° for 20 minutes.
