                       Garlicky Chicken Cacciatore

  2 1/2         pounds  bone-in chicken pieces
  1         tablespoon  olive oil
  2                     onions -- thinly sliced
  4             cloves  garlic -- minced
  2       14 1/2-ounce cans  stewed tomatoes -- undrained
     1/2      teaspoon  dried oregano

1. Sprinkle chicken pieces with 1/2 teaspoon salt and 1/4 teaspoon ground
black pepper. Cook chicken in oil in a deep skillet or large, wide saucepan
over medium-high heat, in batches if necessary, until golden, turning once,
about 10 minutes per batch. Remove chicken pieces from pan.

2. Add sliced onions to pan and cook until tender, 6 to 8 minutes. Add
garlic and cook 1 minute. Stir in tomatoes, breaking them up with side of a
wooden spoon. Add oregano, 1/2 teaspoon salt, and 1/4 teaspoon ground black
pepper and bring to a boil.

3. Add partially cooked chicken pieces to saucepan and return mixture just
to boiling. Reduce heat and simmer, uncovered, until chicken pieces are
cooked through, 20 to 25 minutes.
