Spicy Louisiana Chicken Bake

1 16-ounce can tomatoes -- undrained, cut up
1 cup tomato juice
2/3 cup long grain rice
1 medium onion -- chopped
1/2 cup chopped celery
1/2 cup chopped green bell pepper
2 teaspoons instant chicken bouillon granules
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
2 1/2 pounds meaty chicken pieces (breasts, thighs,
and drumsticks)
Paprika
* In a 13 x 9 x 2-inch baking dish, stir together undrained tomatoes,
tomato juice, rice, onion, celery, green bell pepper, chicken bouillon
granules, garlic powder, and red pepper.
* Remove skin from chicken, if desired. Arrange the chicken pieces on
top of the rice mixture. Sprinkle chicken with paprika. Cover with
foil.
* Bake in a 375 degree oven for 50 to 60 minutes or till chicken and
rice are tender.
