Chocolate Chocolate Chunk Cookies
Contributed by Diana
2 packages (16 squares) or semisweet baking chocolate.
3/4 cup firmly packed brown sugar
1/4 cup soft margarine
2 eggs
1 teaspoon vanilla
1/2 cup flour
1/4 teaspoon baking powder
2 cups chopped nuts
Heat oven to 350 degrees. Coarsely chop 8 squares of chocolate (1
package) and set aside.
Microwave the remaining 8 squares of chocolate in a large microwavable
dish on high for 1 to 2 minutes. Stir until the chocolate in melted and
smooth. Stir in sugar, margarine, eggs and vanilla with a wooden spoon
until well blended. Stir in flour and baking powder. Stir in reserved
chopped chunks of chocolate and the nuts. Drop by scant 1/4 cup (one
large tablespoon) on ungreased baking sheet.
Bake 12 to 13 minutes or until cookies are puffed and feel set to the
touch. Cool on the cookie sheet for at least one minute. Transfer the
cookies to a wire rack to cool completely. Makes about 18 large cookies.
Calorie count: you don't want to know. Just close your eyes and enjoy all
of that chocolate! Believe me, half of a cookie seems to be as rich as a
single piece of fudge. We love them!
