"This was one of my favorites as a child. I dug this out of my
mother's collection last Christmas and made them for the first time
in years. I got so many compliments that I just had to send them in."
Makes 5 dozen-6 dozen
1 egg, beaten
1 cup rolled oats, uncooked
1 cup sugar
1/2 cup butter, melted
3 tablespoons flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
Mix together all ingredients. Cover cookie sheet with aluminum foil, bright
side out. Drop batter by teaspoon onto foil. If mixture is too runny,
refrigerate for 20 minutes to "firm" the batter. There will be about 6
cookies per sheet as they spread out and are very thin. Bake at 350 degrees
for 8-10 minutes. Slide aluminum foil off cookie sheet and let cool 5
minutes.
Review from Jo:
Fast, delicious, not too many ingredients (I'm always short something), and
easy clean up. Did I say delicious?
I give it 3 cups full. U U U
