Rice Pudding Contributed by Susan Source: Family Circle Magazine (September 1999) 3 cups cooked rice 3 cups milk 1/2 cup sugar 3 Tbsp. butter or margarine 1 tsp. vanilla extract 1/2 cup raisins or dried sweetened cranberries In a heavy saucepan, combine the rice, milk, sugar, and butter. Cook over medium heat, stirring often, until thickened (about 30 minutes). Stir in the vanilla extract and raisins or cranberries. Serve hot or cold. Makes 6 servings.September 98 Recipes
