Christmas Applesauce Cake

3 c. applesauce
4 t. soda
1 c. margarine
2 c. sugar
2 t. cinnamon
1/2 t. cloves
1 t. nutmeg
4 c. all-purpose flour
1/2 c. cherry preserves
1/2 c. pineapple preserves
1 c. chopped pecans

Combine applesauce, soda, and margarine. Heat till margarine melts, then
cool. Mix sugar, spices, and flour. Combine with applesauce, mix. Add
preserves and nuts. Pour into greased & floured tube pan and bake at 325
degrees 1 hour 20 minutes.

Optional Buttermilk Sauce
1/4 c. buttermilk
1/2 c. sugar
1/4 t. soda
1/2 t. cornstarch
1/4 c. margarine
1 1/2 t. vanilla

Combine first five ingredients in saucepan; bring to a boil and remove from
heat. Cool and stir in vanilla. Pour over cake.

Makes a very moist cake, even without sauce. (I substitute fructose for
sugar, using large packet for 1 c. sugar; I only use about 1/4 c. sugar
in a cake. I would use 1 1/2 large packets fructose--2 come in a box-- +
1/4 c. sugar in this recipe.)
