Creamy Chocolate Pudding

     1/2  cup           sugar
   2      tablespoons   cornstarch
   2      tablespoons   unsweetened cocoa
   2      cups          1% low-fat milk
     1/4  cup           semisweet chocolate chips
   1                    egg
   1      teaspoon      vanilla extract

In a medium saucepan, stir together sugar, cornstarch and cocoa.  Whisk in
milk, then stir in chocolate morsels.  Cook over medium heat, stirring
constantly with a wooden spoon, just until mixture thickens and comes to a
boil.  Remove pan from heat and set aside for a few minutes to cool
slightly.

In a medium bowl, whisk egg until lightly beaten.  Gradually whisk in about
half the cooled chocolate mixture, pouring very slowly to avoid "cooking"
the egg.  Return the chocolate egg misture to the saucepan along with the
rest of the chocolate; cook and stir over medium heat until bubbly and
slightly thickened.  Remove mixture from heat and stir in vanilla extract.

Pour the pudding into a large bowl, or divide among four dessert glasses.
To preven a skin from forming on the top, press a sheet of plastic wrap
directly on the surface while pudding is cooling.  Serve chilled or at room
temperature, garnished with a generous tablespoon of light whipped topping
and some bittersweet chocolate shavings, if desired.
