Coconut Tarts Contributed by Diane S. 2 Tbsp. butter, soft 1 c. coconut 1/2 c. white sugar 1 tsp. vanilla 1 egg, beaten Tart shells or other pastry Mix first three ingredients together. Line muffin tins with pastry (I use the frozen tart shells). Drop a spoonful of jam into each tart shell and fill with coconut mixture. Bake at 350 for 15 - 20 minutes.September 98 Recipes
