Double Chocolate Cupcakes

1 1/2 c. all-purpose flour
1/2 c. Sugar Twin
1/4 c. unsweetened cocoa
1 t. baking soda
1/2 c. unsweetened orange juice
1/2 t. salt
1/3 c. water
3 T. vegetable oil
1 T. white vinegar
1 t. vanilla extract
1/4 c. mini chocolate chips

Preheat oven to 375 degrees. Spray a 12-cup muffin pan
with butter-flavored cooking spray or line with paper liners.
In a medium bowl, combine flour, Sugar Twin, cocoa, baking
soda, and salt. Make a well in center of mixture. In small
bowl, combine orange juice, water, oil, vinegar, and vanilla
extract. Add liquid mixture to dry ingredients, stirring just
until moistened. Fold in chocolate chips. Fill prepared muffin
cups 2/3 full. Bake 12 minutes or until a toothpick inserted in
center comes out clean. Remove from pan immediately and
allow  to cool on a wire rack.
