Chocolate Chip Muffins

Makes 12 muffins

2 cups all purpose flour
1/2 cup granulated sugar
1/4 cup firmly packed dark brown sugar
2 tsp baking powder
2 egg whites
1 large egg
1 cup skim milk
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup semisweet chocolate morsels, divided
Confectioners' sugar for garnish

Preheat oven to 400F.  Spray a 12 cup muffin pan with cooking spray or
line with paper liners.  Set aside.

In a medium bowl, combine flour, granulated sugar, brown sugar, and
baking powder.  Mix well.  Set aside.

In a small bowl, whisk together egg whites, egg, milk, applesauce and
vanilla.  Add milk mixture to dry ingredients; stir just until combined
(Do not overmix) Fold in 1/3 cup of chocolate morsels.

Divide batter among prepared muffin cups, filling each about two-thirds
full.  Sprinkle remaining morsels on top.  Bake muffin until tops are
firm and golden, about 20 minutes.  Place pan on a wire rack and cool
slightly.  Turn muffin out onto racks and cool completely.  Dust with
confectioners' sugar.

Variation:  To make orange-chocolate chip muffins, substitute 1/2 cup of
orange juice for 1/2 cup of the milk and add 1 tsp grated orange peel to
the batter.
