Banana Nut Muffins

1 cup all purpose flour
1/2 cup whole wheat flour
sugar substitute equivalent to 1 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup buttermilk or sour skim milk (mix 2 tsp of vinegar or lemon
juice to 1/2 cup milk and let stand for 10 minutes)
1 banana, mashed
1 egg, lightly beaten
1 tsp vanilla
1 tbsp melted margarine
2 tbsp chopped walnuts
Lightly greased muffin cups, spray with low-calorie vegetable coating or
line with paper muffin cups. In a bowl, combine flours, sugar
substitute, baking powder, baking soda and salt. In a separate bowl
,combine buttermilk with mashed banana, egg, vanilla and margarine.
Make a well in dry ingredients, pour in banana mixture and add nuts.
MIx just until dry ingredients are moistened. Fill muffin cups 2/3
full. Bake in 400F oven for 20 minutes or lightly browned. Makes 12
muffins.
