Chocolate-Covered Raisin Cookie Mix

Cookie gift mix
3/4 cup sugar
1/2 cup firmly packed brown sugar
1 cup chocolate-covered raisins
1/2 cup chocolate chips
1 3/4 cups flour mixed with 1 teaspoon baking powder and 1/2 teaspoon
baking soda
To make the cookies
1/2 cup (1 stick) butter or margarine, softened
1 egg, slightly beaten
1 teaspoon vanilla, optional
Vegetable oil cooking spray
For the cookie mix, layer the ingredients in the order listed in a jar
large enough to hold them. Include the instructions for making the cookies
with the gift mix.
To make the cookies: Empty the jar of cookie mix into a large bowl and
blend it together. Add the butter, egg and, if using, vanilla. Mix until
completely blended.
Preheat the oven to 375 degrees.
Spray baking sheets with nonstick cooking spray. Shape the dough into
walnut-size balls and place 2 inches apart on the baking sheets. Bake 13 to
15 minutes until tops are very lightly browned. Remove from the oven and
cool 5 minutes on the baking sheet. Then remove the cookies from the baking
sheet and place them on a wire rack to cool completely.
Makes about 2 1/2 dozen cookies; analysis per cookie.
