Pierogies Made Easy

This came from a 13 yr old boy named Tim at my church!

3 lbs potatoes peeled and quartered
1 (8 oz) pkg. cheddar cheese, shredded
1 box jumbo shells
6 c. sliced onion
2 sticks butter
1 tsp salt
1/2 tsp pepper

Use 2 (13x9) dishes.  Cook jumbo shells, slightly.  Drain and rinse well. 

Cook potatoes till tender, mash potatoes, salt and pepper, then add cheddar
cheese.

Melt butter, add onions and simmer 10-15 minutes until tender, but not
brown. 

Spread 1/2 onion over bottom of baking dish.  Gently stuff each shell with
potato mixture and arrange in single layer over onions.  Spread remaining
onions over shells.  

bake uncovered 15-20 minutes until heated through at 350.
