Corn & Black Bean Burgers

2 tsp olive oil
1 C chopped onion
2 TBSP *spicy* bbq sauce
1 C frozen corn (thawed)
1/2 C cooked rice (may be increased to 1 cup) I personally use brown 
rice for this dish
1 15 oz can black beans, drained and rinsed
1/2 C toasted walnuts or pecans (ground to a coarse powder)
1 C plain bread crumbs
salt and pepper to taste

heat oil in skillet over med. heat, add onion and cook until edges start 
to brown.
Add corn and bbq sauce. Cook stirring for a few minutes to blend 
flavors.
Remove from heat.
Place corn mixture, rice, and beans in a food processor and pulse 
several times until blended but still chunky.
Transfer to large bowl and add nuts and bread crumbs. Mix with 
spoon or hands until thoroughly combined. Season with salt and 
pepper to taste.
Divide and shape into either 10 small burgers or 6 large ones (add 
more bread crumbs if mix doesnt hold together well)

Prepare grill or preheat broiler
If using a grill, place patties on a vegetable grid. If broiling, place 
patties on a pan lined with lightly oiled aluminum foil.
Grill over med/hot coals or broil 3-6 inches from heat until lightly 
browned (4-6 minutes each side)
serve immediately.
I personally top these with chunky salsa and sour cream with a leaf 
of lettuce on a hamburger roll.
