Chicken Broccoli Cheese Casserole

4 boneless skinless chicken breasts
1 T fresh rosemary, chopped
salt and pepper to taste
1 cup uncooked white rice
3 heads broccoli
6 T butter
6 T flour
3 cups milk
1.5 cups sharp cheddar cheese
1 cup parmesan or asiago cheese
cooking spray

Preheat oven to 350 degrees. Place chicken in a shallow baking dish,
sprinkle with rosemary, salt and pepper. Combine 1 cup of rice and 2
cups boiling water in a casserole dish. Cover rice and bake chicken
(uncovered) and rice in same oven for 30 minutes. Chop broccoli into
bite-size pieces and steam or boil until tender. When chicken finishes
baking, cut into bite-size pieces.

Meanwhile, melt butter in a sauce pan. Add flour and whisk or stir for
two minutes. Add milk all at once. Stir until thickened. Add cheese,
stir until melted. Add salt and pepper to taste.

Spray bottom and sides of a 9x12 shallow baking dish with cooking spray.
Put chicken in the bottom, then broccoli, then rice. Pour sauce over
top. Cook uncovered at 350 for 30 minutes. Let stand for 15 minutes
before serving.
