Baked Caramel Corn

3 qts. popcorn, popped
1/2 cup butter/margarine
1 cup brown sugar
1/4 cup corn syrup
1/2 teaspoon salt
1/4 teaspoon soda
1/2 teaspoon vanilla

Preheat oven to 250 degrees. Coat bottom and sides of roasting pan (or
cake pan) with nonstick, vegetable spray.  Place popcorn in pan. In
heavy saucepan, melt butter slowly; stir in sugar, syrup, and salt.
Bring to a boil, stirring constantly.  Boil without stirring for 5
minutes. Remove from heat; stir in baking soda and vanilla.  Gradually
pour over popcorn, mixing well.  Bake 1 hour, stirring every 15 minutes.
Remove from oven, cool completely.  Break apart. Makes 3 quarts. Can be
doubled.
