Savory Turkey Breast

Here's a master recipe for a turkey breast in the crockpot, with two
freezer recipes to go with.

Savory Turkey Breast (C/P)

6 1/2 pounds turkey breast -- bone-in
1 onion -- chopped
1 stalk celery -- chopped
1 bay leaf
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
1 teaspoon chicken bouillon granules
1/2 cup water
Remove gravy packet or extra parts from turkey breast. Place onion,
celery and bay leaf in cavity of turkey. Place turkey in 5-quart slow
cooker.
Sprinkle turkey with salt and pepper. Mix bouillon and water; pour over
turkey. Cover and cook on low heat 8-9 hours or until juice of turkey is
no longer pink with center is cut. Remove bay leaf.
Serve 1/3 of turkey for dinner. Cut another 1/3 of turkey into 1" pieces
(3 cups) and put in freezer container for Sweet-and-Sour Turkey. Shred
last 1/3 of turkey (3 cups) and put in freezer container for Turkey
Black Bean Wraps. Cover and freeze. To thaw, place in refrigerator about
8 hours.

Sweet-and-Sour Turkey (Savory Turkey Breast)

1 tablespoon vegetable oil
2 medium bell peppers -- in 1" pieces
1 medium onion -- in wedges
1 clove garlic -- minced
3 cups Savory Turkey Breast -- thawed
1/2 teaspoon five-spice powder
8 ounces canned pineapple chunks in juice -- drained
9 ounces sweet-and-sour sauce
3 cups chow mein noodles
Heat oil in large skillet over medium high heat. Add bell peppers, onion
and garlic; stir fry 3-4 minutes or until vegetables are crisp-tender.
Add turkey; sprinkle with five-spice powder. Stir in pineaple and
sweet-and-sour sauce. Cook aboaut 5 minutes, stirring occasionally,
until heated through. Serve over noodles.

Turkey Black Bean Wraps (Savory Turkey Breast)

1 1/2 cups salsa -- chunky
3 cups Savory Turkey Breast -- thawed
15 ounces black beans, cooked -- drained
1 teaspoon lemon juice -- or lime juice
1/4 teaspoon cumin powder
8 flour tortillas
1 1/2 cups monterey jack cheese -- shredded
Mix salsa, turkey, beans, lemon juice and cumin in large saucepan. Heat
to boilng; reduce heat and simmer 3-5 minutes or until heated through.
Spread mixture on tortillas; top with cheese; roll up.
May add jalapeno peppers to taste, and use lime juice instead of lemon.
Chili powder may be substituted for cumin.
