PBS Bok Choy

1 head bok choy
1/2 cup vegetable oil
3 Tbsp water
1 Tbsp sugar
1/2 Tbsp salt
1 clove garlic, minced
1/3 cup lemon juice
Rind of one lemon (optional)
Tabasco sauce to taste (optional)

Seperate leaves from stalk.  Cut stalk into pieces 1-2" long.  Tear leaves
into pieces.

Warm large pan over medium heat.  Add oil, water and stalks.  Cover and
allow to cook for 3 minutes.

Add sugar, salt, garlic, lemon juice, rind and tabasco.  Stir.  Add leaves
and stir.  Cook uncovered, constantly stirring, 1-2 minutes or until stalks
are tender.
